Zucchini noodles with chicken - a recipe for vegetable noodles for 1-2 people using GEFU Spirelli XL.
Ingredients
- 1 large zucchini,
- a handful of cherry tomatoes,
- 2 cloves of garlic,
- pesto sauce (homemade or store-bought),
- pine nuts and grated hard cheese,
- 1 large chicken fillet
Seasonings: salt, pepper, dried oregano or basil Lemon juice
Preparation
- Cut the chicken fillet into small, uniform pieces. Season with salt, pepper, and oregano.
- Using a GEFU Spirelli XL spiralizer, cut the zucchini, with skin on, into long noodles.
- Heat a little oil in a pan and cook the chicken pieces over medium heat until golden brown and cooked through (approximately 5-7 minutes). When the chicken is done, remove it from the pan.
- In the same pan (where the chicken flavors remain), sauté the minced garlic for about 30 seconds.
- Add the halved cherry tomatoes and cook for 1-2 minutes until they soften.
- Add the zucchini noodles.
- Important: cook them for only 1-2 minutes ("al dente") so they don't become too soft and release too much liquid.
- Return the cooked chicken to the pan and add the pesto, sprinkle with toasted pine nuts and cheese.
- Finally, squeeze a little fresh lemon juice – it will perfectly highlight the flavors of the chicken and pesto.
Tip:
- If you want a more refined taste, you can coat the chicken in a small amount of grated Parmesan cheese before frying – this will create a delicious crust.
- Choose small zucchini – they have smaller seeds and softer skin.
How to prepare zucchini noodles so they don't release excess liquid in the pan?
- Place the noodles cut with GEFU Spirelli XL in a colander.
- Sprinkle them with salt and mix gently.
- Let stand for 15-20 minutes.
- Press the noodles thoroughly with your hands or a paper towel.
Pesto selection
Here are three types of pesto that best complement the combination of zucchini and chicken:
- Classic Pesto alla Genovese (basil pesto): This is the safest and most popular choice. The freshness of basil perfectly complements the neutral taste of zucchini, while pine nuts and Parmesan give the chicken the necessary richness.
- Sun-dried tomato pesto (Pesto Rosso): If you want a more intense, slightly sweet and "deeper" flavor. This will give the dish a beautiful color and will go perfectly with the cherry tomatoes mentioned in the recipe.
- Lemon and parsley pesto: This is the most refreshing option. As zucchini and chicken love lemon, this pesto will make the dish "lighter" and more summery.
Important tip: If you buy ready-made pesto in a jar, you can dilute it slightly with lemon juice or a teaspoon of warm water before adding it to the pan – this will help the sauce coat the long zucchini noodles more evenly.
