Quarz-Email (quartz enamel) is a premium protective layer that Patisse uses in its Premium series. It combines glass-like smoothness with metal durability.

Advantages of enamel

• Extreme heat resistance: Unlike conventional non-stick coatings, which start to degrade at 260°C, quartz enamel safely withstands temperatures of up to 400°C.
• Scratch resistance: The surface is so hard that you can cut cooked food on it with a metal knife or use metal spatulas without damaging the pan.
• Chemical neutrality: It is resistant to fruit acids and alkalis. This means the pan will not react with food (e.g., when baking sour apples or berries) and will not affect its taste.
• Easy care: The smooth, glassy surface prevents food from sticking tightly, and these pans are safe for washing in a dishwasher.
• Heat distribution: The enamel layer helps distribute heat more evenly across the entire surface, which is essential for achieving a perfect bread crust.
