The 20 cm long GYUTOH knife has a smooth, pointed blade , which makes it well suited for cutting fish and meat . Large vegetables will also be no problem.

MIYABI has focused on creating an authentic Japanese blade profile that makes the knife extremely hard and sharp. The cutting properties are complemented by a Pakka wood handle that is comfortable to hold in the hand. The blade is made of micro-carbide powder steel embedded between two other layers of steel. The blade is further hardened using a special procedure such as ice hardening at -196 degrees Celsius to achieve an extremely high level of hardness and sharpness. The blade is ground on both sides and processed using the Honbazuke blade sharpening technique . It is also very aesthetically pleasing thanks to the Tsuchime design that looks as if the surface has been forged.

The ergonomically shaped handle is made of cocobolo pakka wood, a dark, smooth-grained wood that contrasts sharply with the blade. The handle has a curved shape for effortless cutting. The knife handle is well-balanced, which is typical of the MIYABI 6000MCT series knives. Thanks to this balance, it is possible to work for a long time without getting tired. With this high-quality Japanese knife, you can accomplish many tasks in the kitchen.

The blade core is made of MicroCarbide MC63 powder steel embedded in two layers of steel. This provides a hardness of approximately 63 Rockwell. (International standard unit of hardness)
