The PATISSE proving basket is a round wicker basket (French: banneton) designed for proving dough before baking.

Main features

Application : Used in the final stage of bread dough fermentation to give the loaf its shape and characteristic embossed stripe pattern.

Material : Natural rattan wicker (willow wicker), which absorbs excess moisture from the surface of the dough, helping to create a crispy crust.

Important : This basket is for proofing only, it should not be placed in the oven. Before use, the basket should be generously sprinkled with flour to prevent the dough from sticking.

Preparation for use

To ensure that your PATISSE bread proofing basket works perfectly and the dough never sticks to it, it must be prepared before using it for the first time . Natural rattan is very dry at first, so flour will not stick to it unless you use this method:

  1. Wetting the Basket (Only Once!) Lightly spray the inside of the basket with water from a spray bottle or wipe with a clean, damp cloth. The basket does not need to be wet, just slightly damp so that the flour can stick to the wicker.
  2. First layer of flour Pour a generous amount of flour into the basket and use your hands or a brush to work it carefully into all the grooves and between the wickers. Shake off any excess flour by tapping the base of the basket lightly.
  3. Drying completely Let the basket dry completely for at least 1-2 hours (ideally overnight) before placing the first dough in it. This "flour crust" will act as a protective layer.

A knife for professionals

Rice Flour Most bakers recommend using rice flour (or a 50/50 mix with wheat flour) to line the basket. Rice flour is gluten-free and doesn't absorb moisture as quickly as wheat flour, so it acts like "Teflon" - the dough literally slides out of the basket.

Daily care after use

Never wash the basket with soap! If necessary, use only water and a stiff brush. After each use, simply brush off excess flour with a dry brush and let the basket dry completely in a well-ventilated area to prevent mold from forming.
