The knife is characterized by a large, almost rectangular blade and a horizontal cutting edge, which makes it look very similar to a classic kitchen axe. However, while the latter's main purpose is to cut bones, you shouldn't try to do that with the 18 cm long Chinese version. The blade is thinner than that of an axe, so it is better suited for cutting.

Real professionals also use the large surface of the blade to transfer finely chopped ingredients into a wok or pot. This is particularly easy to do thanks to the well-shaped plastic handle. The knife is made of the highest quality single-piece steel. The FRIODUR blade is additionally treated with a special ice-hardening process, making it very durable and giving it an especially hard cutting edge.
